To hit the coffee sweet spot, you need to select the best coffee beans out of many different bean qualities, types, and origins.
We select our custom coffee bean blends from the highest grade, specialty coffee beans only. We never use commodity coffee beans.
From this tiny fraction of the specialty coffee market, we only use high-grade Arabica coffee beans and high-growth Robusta coffee beans.
All the coffee beans in our custom coffee blends grow in the mountains and highlands of Brazil, Honduras, and Vietnam, where they grow slower and develop more natural sugars such as fructose. The best high-grown coffee beans make for sweet coffee.
Only a small portion of the Arabica or Robusta harvests are strictly high grown, so we must be very selective.

A French press requires low acidity coffee beans with a high level of natural oils to yield abundant creaminess. High-grown coffee beans grow a little slower than coffee beans growing at sea level. The slow growth provides the coffee cherries more time to develop natural sugars such as fructose.
Our blend of French Press custom coffee beans contains about 20% Robusta coffee from the highlands in Vietnam. Not only do these Robusta coffee beans add more creaminess with their natural coffee oils, the high-grown Robusta coffee also contains about twice the amount of caffeine as Arabica coffee.

If you prefer clean pour over or drip coffee, specialty coffee beans with abundant natural oils will not help. The paper filter in a Chemex or drip coffee maker will not allow natural coffee oils to pass from the coffee grinds into your cup.
At Peak Flavor, we add only a small fraction (5%) of Robusta coffee beans to the Arabica coffee base in our custom coffee bean blends for pour-over drip coffee. Robusta coffee beans contain about twice as much caffeine as Arabica coffee beans. Most pour-over drip coffee lovers drink their drip coffee in the morning, so we figure a little more caffeine can be beneficial.

Our custom coffee bean blends for reusable k cups contain strictly high-grown Arabica coffee beans from Brazil and Honduras to provide natural sweetness. For crema and some additional caffeine, we add 15% Robusta coffee beans.
