Fresh roasted coffee beans bloom with oils and aroma compounds - think, caramel, vanilla, and honey. But those flavors start escaping the moment roasting ends. Here is a timeline of how coffee taste develops between roasting and brewing.
Hour 0–24 after roasting: Beans are off-gassing CO₂. Great smell, terrible extraction. Days 2–7: Aromas settle as coffee rests. Days 7–14: This is when coffee reaches Peak Flavor. Oils intact. Acidity balanced. Days 14–21: Your coffee tastes "fine", not "great". Aromatics fade. Bitterness creeps in. Day 30+: Oxidation takes over resulting in bitter, sour and rancid taste notes. Grind Size is Critical - Nobody’s Matching to Your Coffee Maker
The physics of your coffee machine decides how your coffee should be ground. Not the label on a grocery store bag. Different coffee filters require their unique, specific grind. When it comes to the correct grind size, however, two factors really matter: grind size accuracy and grind size consistency.
When grind size uniformity is low (e.g. 50%), a coffee maker extracts less flavor. When consistency is near perfect (e.g. 98%), coffee flavor peaks, as illustrated in this graph.
In short, better grind size consistency dramatically improves coffee flavor.
Why Grind Size Accuracy & Consistency Matter?
Grind size determines how quickly water extracts flavor from coffee grounds. If your grind is too fine, water extracts too fast, often resulting in bitter, over-extracted coffee. If it's too coarse, the brew may taste sour or weak due to under-extraction.
This is why grind size accuracy—matching the grind size to the brew method of you coffee maker—is essential. For example, espresso grounds are not just "extra-fine". An espresso machine requires 350 micron grinds, while French press works best with coarse grinds (~1050 microns).
But grind consistency is just as important. Grind size consistency means coffee grounds are uniform in size, ensuring even extraction and balanced flavor. Scientific research shows that inconsistent particles (a mix of fine "dust" and large "boulders") lead to uneven extraction: some grounds get over-extracted (bitter), others under-extracted (sour), all in the same cup. A consistent particle size improves Total Dissolved Solids (TDS) and Extraction Yield (EY), key measures of coffee quality.
In fact, studies published in Scientific Reports show that grind size consistency has a greater impact on flavor than upgrading your coffee machine.
