The ideal grind size for pour-over coffee is medium-coarse (around 850 microns, or similar to coarse sea salt).
This size allows water to flow through at a steady rate, avoiding both under-extraction (which makes coffee sour or watery) and over-extraction (which creates bitter notes).
Pour-over highlights delicate floral, fruity, and natural coffee flavors, making freshness essential. Coffee is best brewed within 2 to 3 weeks of its roast date. Freshly roasted coffee contains natural gases that create a healthy "bloom" when hot water hits the grounds, unlocking maximum aroma and sweetness.
Ratio: A general rule of thumb is a 1:15 to 1:16 ratio (1 gram of coffee for every 15–16 grams of water). For a standard 10 oz cup, use about 20g of ground coffee to 320g of water.
