Crema dies first. That’s science. Coffee beans lose over 70% of their CO₂ within two weeks after roasting. That means stale espresso beans—anything older than 21 days—won’t bloom with real crema.

The Blend: Arabica Finesse Meets Robusta Power
There’s a reason Italians love their blends. Arabica brings complexity and sweetness—think floral and fruity notes. But Robusta is the secret weapon behind that bold flavor and thick crema. It's got nearly twice the caffeine, more lipids, and a protein punch that gives crema its body and bounce.
Studies show that blends with 10–30% Robusta generate richer, longer-lasting crema. We use an 85:15 Arabica–Robusta blend—just like traditional Italian roasters. It’s the sweet spot for flavor and foam.
