Why Italian Coffee Somehow Tastes Better?

I’d been drinking espresso for years—thought I knew my way around a portafilter, maybe even a little smug about it. But then I went to Italy.

It happened at a tiny café tucked between a pharmacy and a newspaper stand in Florence. I ordered an espresso. One sip, and I froze mid-step. It was richer. Bolder. Somehow sweeter, without a trace of syrup.

And the crema—thick, tiger-striped, and velvety—clung to the cup like silk. I had to ask the barista what their secret was. He shrugged, as only an Italian barista can, and said: “The beans came in fresh this morning.”

That’s when it hit me. In the U.S., even the trendiest cafés are pulling shots with espresso beans roasted 3–4 months ago. Coffee that far gone has lost its soul—and more importantly, its crema.
